Chester is a town in Orange County, New York that was settled in the 1700s by Europeans. A village by the same name was formed in 1892 and is located in what is considered Downtown Historic Chester. This town and village hold the honor of being the birthplace of “Philadelphia Cream Cheese.” Other than this the town is also known for producing Clover Brand, Cow Brand, D’isigny, Fromage De Brie, Neufchatel, Star Brand and World Brand dairy products. The Erie Railroad chose Chester to be one of its stops. Chester’s dairy products soon traveled across New York.
Phil Gregory, a local farmer, prospered greatly because of this. He was able to provide New York City with 240 quarts of milk a day. Which earned the railroad $1.20 in freight charges. This number would eventually increase to 300,000 quarts of milk a day. Which in turn earned the railroad over $1000 in daily profit. Today, this town makes up 25.20 square miles (2.1 of which is the village) of the 839 square miles of Orange County and has a population of around 11,944 (3,957 live in the village).
